1 cup chickpea flour 2 cups water 1 teaspoon salt 1/2 teaspoon ground black pepper Vegetable oil 4 round soft rolls Lemon juice Salt and pepper Olive oil

Ingredients
Combine the chickpea flour, water, salt and pepper in a pan. Whisk until there are no lumps. Cook until it becomes a smooth, thick batter for about 5-7 minutes.
Grease a large baking sheet with oil. Pour the batter and spread it out evenly to a thickness of about 1/4 inch. Allow it to cool and set completely.
Once the panelle has cooled and firmed up, cut it into rectangular pieces or squares.
Fry the panelle until golden brown and crispy on both sides. Remove from the pan and drain excess oil on a paper towel.
Slice the soft rolls in half, but not all the way through. Place some panelle pieces on the bottom half. Add sliced tomatoes and lettuce leaves if desired.
Squeeze fresh lemon juice over the panelle and season with salt and pepper to taste. Drizzle a little olive oil over the top.
Close the sandwich with the top half of the roll. Serve the pane e panelle sandwiches while hot.
